Situated on a high plateau in the Cantal, our family-run dairy has been making traditional cheeses for 3 generations
Based at La Chapelle-Laurent, in the Cantal, in a mountainous area at an altitude of almost 1000 m, nestling between the Alagnon valley and the high plateaux of the Margeride, our family-run Gardon cheese dairy processes milk from local farms into local cheeses.
Well-fed cows providing organic local milk imbued with the flavour of our high pastures
All our milk is produced within 7km of the dairy, by cows fed on the grass of high pastures, or hay harvested at its best and then dried in the barn. with no use of silage. An organic supplement is added, based mainly on the farm’s home-grown cereals, vetch and peas.
Both the milk and its processing method are certified organic.

Campalou and Tomme des 3 Sucs: artisanal, Organic raw milk cheeses
The use of raw milk gives our cheeses a distinctive aromatic character and enhances their artisanal aspect: although regular, their taste is far from standardised and varies with the seasons, just as grass does. The production of raw milk cheeses requires a unique level of skill and expertise from the cheesemaker during each stage of production and maturation.

People love its firm, melt-in-the-mouth texture and mild flavour, while its thin rind makes it easy to eat. Easy to transport and store. Being an artisanal cheese, its weight varies around 300g.
La Tomme des 3 sucs
... a new local cheese to savour
A fairly firm cheese with a thin rind and a soft, velvety texture. Matured for at least two months, it has a distinctive, fresh, slightly acidic flavour. Easy to transport and store. Its weight varies around 2 kg.
OUR RECOMMENDATIONS
All our cheeses should be served at room temperature. To eat them at their best, we recommend taking our cheeses out of the fridge at the beginning of your meal. Serve them for dessert on a cheese platter, or to go with a salad or a main dish, or as an aperitif, cubed or on toast.
